Baked Tuna Chow Mein
I use 2 cans of tuna. I've made this for company and they usually think it's a chicken casserole!

Ingredients
- 1 cup chopped celery
- 1/4 cup chopped onion
- 2 tablespoons green pepper, chopped
- 1 tablespoon butter
- 1 tablespoon tuna in water, drained
- 1 10.5 oz can cream of mushroom soup
- 1/8 teaspoon pepper
- 1 3 oz. can chow mein noodles (1 1/2 cups), Save 1/3 c. for topping
- 3/4 cup cashews
Instructions
Heat oven to 350°. Saute celery, onion, and green pepper in butter. Mix in the rest of the ingredients; pour into buttered 1 1/2 quart baking dish. Sprinkle with 1/3 cup show mein noodles. Bake for 30 minutes.
