Chocolate Eclair Ring

Ingredients

  • 1 cup water
  • 1/2 cup butter
  • 1 cup flour
  • 4 eggs
  • 2 3 oz. pkg instant vanilla pudding
  • 3 cups milk
  • 1 teaspoon vanilla
  • 1 cup powdered sugar
  • 1 8 oz Cool Whip
  • 2 tablespoons cocoa
  • 2 tablespoons butter

Instructions

Preheat oven to 400 degrees.

  1. Crust: Bring water and butter to a boil. Add flour and stir until it forms a ball. Remove from heat. Add eggs 1-at-a-time, beating well after each addition. Spread dough on a cookie sheet in the shape of a donut. Bake 45 minutes at 400 degrees. Cool. Slice in half lengthwise and remove any unbaked dough.

  2. Filling: Mix milk and pudding, fold in vanilla and Cool Whip. Fill crust.

  3. Frosting: Mix frosting ingredients. Place over crust and filling.
