Cranberry Nut Bread

Ingredients

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 cup orange juice
  • 2 tablespoons hot water
  • tablespoons butter
  • 1 egg, beaten
  • 2 tablespoons Crisco, melted
  • 1/2 cup nuts, chopped
  • 1/2 cup grated rind of 1 orange

Instructions

Sift dry ingredients together; add egg, shortening, orange juice, and hot water. Mix until dry ingredients are moistened. Fold in the nuts and cranberries and orange rind. Bake in greased loaf pan for 1 hour and 10 minutes at 325°. Cool in refrigerator 24 hours.

You can make several mini loaves instead of 1 large one.
