I got this recipe from Delma Phillipson and I like it because you get consistent results!

Ingredients
- 6 3/4 cups water
- 1/2 cup butter
- 1 cup land
- 1 tablespoon salt
- 4 teaspoons sugar
- 12/3 cups milk
- 7 1/4 cups potato buds
- Extra flour
Instructions
Heat the first 5 ingredients to boiling. Add the milk and potato buds. Beat well and chill overnight. With your hands, mix 2 cups of the potato mixture and 1 cup flour. Make balls; roll out with lefse rolling pin; cook on lefse griddle.
