Mock Pear Bread

Ingredients
- 3 cups cooked & drained fruit (apples, prunes, (Reserve juice)
- pears, raisins, apricots, peaches, etc.)
- 3/4 cup sugar
- 1/2 cup reserved fruit juice
- 1/2 cup reserved fruit allspice
- 1/2 teaspoon baking soda
- 2 teaspoons baking soda
- 1 cup nuts, chopped
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon anise
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 teaspoon salt
Instructions
To the cooked, dried fruit, add sugar and juice and soda. Mix well. Add nuts. Sift flour with other dry ingredients into the fruit mixture. Mix well. Bake in loaf pans slowly at about 250° for 2 hours and mix well. Bake in loaf pans slowly at about 250° for 2 hours (325° for 45 minutes—small loaves). Makes 4 small loaves.
