Ingredients

  • 4 cups Sauterne or Rhine wine
  • (I use large onions)
  • 2 large onions
  • 12 cloves
  • 4 bay leaves
  • 8 peppercorns
  • 6 pounds sirloin tip roast, trimmed
  • salt

Instructions

Combine all ingredients. Marinate 5 days! Drain and reserve marinade. Heat on both sides. Add marinade. Cover and bake at 300° for 3 hours.

Make gravy with sauce. Add Kitchen Bouquet to darken.

After 2 hours, take out and slice thinly and make gravy. Finish cooking.
