Ingredients

  • 4 cups Sauterne or Rhine wine
  • (dry)
  • 2 large onions
  • 4 bay leaves
  • 8 peppercorns
  • salt
  • 6 pounds sirloin tip roast, trimmed
  • 12 cloves

Instructions

Combine all ingredients. Marinade 5 days!. Drain and reserve marinade. Brown meat on both sides. Add marinade. Cover and bake at 300° for 3 hours.

Make gravy with sauce. Add Kitchen Bouquet to darken.

After 2 hours, take roast out and slice thinly and make gravy. Finish cooking.
