Sugar Cookies (roll out)

I got this recipe from the Betty Crocker cookbook. I have always had good luck with it. The trick is to have the dough chilled when you begin rolling it out to avoid sticking.

Ingredients

  • 3/4 cup shortening, (half butter)
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla OR 1/2 tsp lemon extract
  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Instructions

Cream together the shortening and sugar. Stir in eggs and vanilla or lemon extract. Add remaining ingredients and mix thoroughly. Chill AT LEAST 1 hour (I usually chill overnight). Roll 1/8" thick. Cut out and bake at 400° for 6-8 minutes.
